1 diced Aubergine
1 diced Yellow Pepper
2 diced Courgettes
2 diced tomatoes
1 diced Red Pepper
1 sliced Onion
1 crushed clove of Garlic
Olive Oil
2 Vegetable Stock Cubes
Instructions:
Heat a little oil and dissolve the stock cubes. Add the garlic to this followed by all the vegetables cut into bite-size chunks. Cook this for around 20 minutes on a medium heat before serving
