MEDITERRANEAN COTTAGE PIE   Ingredients:

350g peeled Potatoes
1 tablespoon of Flour
225g of Beef Mince
50ml of Beef Stock
1 sliced Onion
2 chopped Sun Dried Tomatoes
2 chopped Anchovies (from a can)
2 chopped Tomatoes  

Instructions:

Preheat the oven to 190˚C. Cook the potatoes, just submerged in water for 8 minutes and then grate when cooled. Fry the mince and onion in a pan for about 10 minutes and then stir in the flour, anchovies and tomatoes. Add the beef stock and bring the mixture to the boil. Pour this into an oven proof dish and scatter the grated potato and sun dried tomato on the top. Cook for 20 minutes and serve.
