2 Potatoes
3 chopped Spring Onions
Cream Cheese
Tinned Tuna
Grated Cheese
Breadcrumbs
Instructions:
Peel the potatoes and place them, just submerged in water, on to boil. Once this has happened turn down the heat and simmer for 15 minutes. Drain them and mash with cream cheese until smooth, add a little grated cheese and mash in before adding the drained tuna. Mix in the tuna and spring onion until it is spread throughout the mash and then mould the mixture into several discs. Roll these in breadcrumbs and fry the fishcakes until cooked on both sides.
