Ingredients:
40g Sponge Fingers 125g Mascapone Cheese
200g ready made Custard
175ml of boiling water with 1/2 a tablespoon of Coffee Powder mixed in
2 tablespoons of Tia Maria
Instructions:
Mix together the coffee mixture and Tia Maria. Take the sponge fingers one at a time and dip them into the liquid until they are fully saturated. Place half of the fingers into a dish. Blend together the mascarpone and custard into a creamy mixture with a whisk. Smooth half of the mix over the biscuits and top with another layer of biscuits and then mixture. Make sure the top is smoothed and serve, sprinkle it with cocoa powder for added taste.
