HONEY COMB   Ingredients:

6 tablespoons of clear Honey
150ml of Water
25g Margarine
1 teaspoon of Vinegar
275g Granulated Sugar
1 teaspoon of Bicarbonate of Soda  

Instructions:

Put everything except the bicarbonate of soda into a big pan and put it over a low heat whilst the sugar melts, stirring it regularly. Bring it to the boil and cover for 2 minutes whilst it continues to boil. Uncover the mixture again for 10-15 minutes without stirring. Test when it is done by dropping a small amount in some cold water- hard threads should be formed when this happens. When it is ready move the pan off the heat and stir in the bicarbonate of soda. The mixture will rise and should then be poured into a greased tin and left to set. Once it is hard break the honeycomb up. This is nice crumbled over ice cream, dipped in chocolate or alone as a treat.
